The exclusive 5-course Indo-Persian dining experience of the 'Bus, centred around the biryani, is inspired by two classical cuisines, not only from where the biryani originates, but that complement each other exquisitely. Indeed, both are inextricably linked in the Moghlai and Parsi cuisines of India; the latter a popular mainstay of Mumbai culture.

Our ethos dispels the notion that Indian food is based on undiscernible spicing with heat levels either explosive or annoying sweet. In fact, honest Indian cuisine doesn’t hide behind these tricks, but instead offers diners a sublimely exciting experience of spices, without hiding other flavours and fragrances. Adding Persian/Middle-Eastern flair into the mix only elevates the refinement!

So whether you’re a biryani connoisseur or have yet to try this extravagant rice dish in its true form, you’ll be sure to enjoy a carefully crafted biryani supper brought by the ‘Bus to your home or other setting - elegantly serving from 1 to 20. With a selection ranging from the classic Moghlai biryani to that inspired by the Malabar coconut coast, there is choice for all preferences.

Of course, our main courses span beyond the biryani - the menu ahead will provide other Indo-Persian supper inspirations, equally classic and holistic in ingredients and preparation - with a few pleasant surprises tucked in for good measure!

All preferences catered t0 also for heat level and diets (including vegetarian/vegan, dairy-free, gluten-free or Halal); all dishes nonetheless prepared with only the best ingredients, including low saturated fats seed oils, fresh spices and natural extracts.
